The average age of the vines is about 9 years, and the annual production volume is 800 bottles, making this a rare wine. Hand-picked, pale yellow with a greenish tint, it has a bright shine. It has a typical Chardonnay aroma with notes of hawthorn, acacia, and white flowers such as vervain. It has a dense, taut taste and an elegant finish. | Ante MCMLXXX means before 1980, and the grapes for this cuvée were planted between 1965 and 1975. The soil is 2 hectares of clay-limestone with Kimmeridgian soil underneath. The average age of the vines is 45 years. The wine is fermented at a controlled temperature of 16-18°C, and then malolactic fermentation is carried out. The wine is aged for 12-16 months on the lees in 50-100hL stainless steel tanks and 500L (demi-muid) oak barrels. The old vines give the wine depth and minerality. It is very fresh, with aromas of flint and citrus. These aromas linger on the palate. This is a very refined wine that shows the characteristics of Chablis very well. | ||
