ドメーヌ・ジャン・ショーヴネは家族経営のドメーヌでニュイ・サン・ジョルジュ地区のヴォーヌ・ロマネにほど近い場所にある。所有している畑は10haほどで、ニュイ・サン・ジョルジュ　プルミエ・クリュを中心とした9つのアペラシオンを造っている。畑は南北に広がっており、植えている品種はピノ・ノワールのみ。ドメーヌはクリストフ・ドラグ(ジャン・ショーヴネの義理の息子）とその妻　クリスティーヌによって運営されており、ただ一つのゴールデンルール「それぞれの土壌の特徴を尊重し違うワインを造り出すこと」を掲げ、ピノ・ノワールの繊細さとフレッシュさ、そしてアロマを引き出す事に全力を注いでいる。ドメーヌはクリストフが引き継いだ1994年から収量を絞り、化学肥料の使用を減らして認証取得を目指してきた。2003年からはブドウの畝と畝の間を草で覆う様になった。これは土壌浸食と土壌の温度上昇を防ぎ、自然治癒力を高める効果がある。また、クリストフは質の良いブドウを収穫する為に、摘芯を厳しく行っている。収穫は手摘みでブドウが十分に熟し、フェノールとタンニンが備わったタイミングで行う。基本的な醸造は発酵後に樽で18ヶ月熟成させており、新樽比率は約20％。テロワールを生かす為に、フィルタリングや清澄は行わない。このドメーヌが造り出すワインは繊細でエレガント、また長期に渡り高品質を維持できる様なワインとなっている。

Domaine Jean Chauvenet is a family-run domaine located near Vosne-Romanée in the Nuits-Saint-Georges district. The farm owns approximately 10ha of vineyards, and has nine appellations centered around Nuits-Saint-Georges and his Premier Cru. The field stretches north and south, and the only variety planted is Pinot Noir. The domaine is run by Christophe Drague (Jean Chauvenet’s son-in-law) and his wife Christine, with one golden rule: “Respect the characteristics of each soil and create different wines.” We do our best to bring out the delicacy, freshness, and aroma of the wine. Since Christophe took over the domaine in 1994, the domaine has been aiming to achieve certification by reducing yields and reducing the use of chemical fertilizers. Since 2003, grass has been used to cover the spaces between the grape ridges. This has the effect of preventing soil erosion and rising soil temperature, and increasing the natural healing power of the soil. In addition, Christophe strictly thins the grapes in order to harvest high quality grapes. Harvesting is done by hand when the grapes are fully ripe and loaded with phenolics and tannins. Basic brewing involves aging in barrels for 18 months after fermentation, with the ratio of new barrels being approximately 20%. No filtering or fining is done to take advantage of the terroir. The wines produced by this domaine are delicate, elegant, and of a quality that can be maintained over a long period of time.
